Oat Bran Muffins (Wheat-Free)

Ingredients:

2 cups Oat Bran Hot Cereal (Quaker is good), uncooked
3 tblspns Natural Fruit Sugar
2 tspns Baking Powder (preferably aluminium & gluten free)
1 cup unsweetened Soya, Rice or Oat Milk
2 Egg Whites, lightly beaten
¼ cup Honey or Black Strap Molasses (Molasses gives a lovely flavour)
2 tblspns olive oil
1 large ripe Banana, mashed or ½ cup fresh or frozen Blueberries
 Optional: 50g Dark Chocolate, min. 70% Cocoa Solids, broken into small pieces

Method:

Heat oven to 2200C.  Grease 12 hole muffin pan or line with paper cases.
Combine dry ingredients, mix well.
Add combined milk, egg whites, honey or molasses and oil.  Mix until just combined.
Fold in banana/blueberries and chocolate pieces, if using.
Fill muffin holes/cases and bake for 15 to 17 mins or until golden brown.
Leave to cool in pan for 5 mins, remove and place on wire rack until completely cool.
These freeze beautifully packed in a sealed container.
