Recipes Containing Sunflowers

CHICKEN AND SUNFLOWER SEED SOUP
SERVES 4
PREP 5 MINS
COOK 1 HOUR
• 2tbsp sunflower oil
• 3 small onions, thinly sliced
• 2 large chicken breasts, cut into large chunks
• 400 ml/14fl oz fresh chicken stock
• 200g/7oz sunflower seeds, hulled
• 2tbsp chopped fresh dill
• Salt and ground pepper to taste
1. Heat the oil in a large saucepan and add the onions. Fry for two – three minutes or until soft. Add the chicken and cook for a further five minutes.
2. Add the chicken stock and sunflower seeds and bring to the boil. Turn the heat down and simmer for about an hour.
3. Stir in the dill and season with salt and pepper to taste.
CHEWY SUNFLOWER BARS
SERVES 4 – 6
PREP 5 MINS
COOK 20 MINS
• 200g/7oz rolled oats
• 75g/3oz flour
• 1/2 tsp baking soda
• 1/2 tsp vanilla essence
• 2tbsp honey
• 150g/6oz sunflower seeds
• 1 – 2 handfuls chocolate chips/raisins/coconut/chopped apricots to taste
1. Preheat oven to 165C/145C fan/gas mark 5. Mix all the ingredients in a large bowl. Lightly press the mixture into a greased lined tin and cook for approx 20 minutes or until golden.
2. Allow to cool and cut into bars 10cm x 4cm wide. Wrap in foil and store in the fridge until required,
